Crab lemon pasta

Tonight it was fresh crab which took my fancy and at 4 Weight Watchers Pro Points per 100g it’s not too bad as a pasta accompaniment, especially in comparison to a salmon fillet which is about 6 Weight Watchers Pro Points. Not to mention the fact that crab is just damn yummy!!! Mmmmm đŸ™‚

Ingredients

70g Pasta, dried
50g Fresh crab
1 Small onion
1 Large clove of garlic
Handful of mushrooms (I used chestnut)
3 Asparagus spears
Handful of spinach

Method

1) Boil the kettle and weigh the pasta. Put both into a saucepan, bring to the boil and simmer until pasta is tender

2) Chop and in a frying pan spray with a little fry lite / olive oil spray and cook the onion, garlic and mushrooms over a medium heat. Stir occasionally, adding a little water if mixture sticks

3) Break the asparagus into small pieces and pop into the pan with the pasta briefly, when cooked and drain

4) Add lemon zest and juice of half a lemon

5) Stir the spinach into the onions and mushrooms to wilt, follow up with the pasta and asparagus, stir and season with salt and pepper

6) Serve and enjoy
