Chocolate orange truffle cake


This is a fantastic Cook Yourself Thin recipe for the most decadent tasting chocolate cake, I would go as far as to say that in texture it compares to the most incredible of all chocolate cakes; Nigella Lawson’s Sour cream chocolate cake, but with about half the calories! This is Gizzi Erskine‘s chocolate orange truffle cake and it is fat and flour free!  I did however, include one tablespoon of sour cream in the icing to loosen it slightly as I find it very difficult to cut and eat with harden chocolate on top of a cake, this makes it just as fudgy as the rest of the cake – utter bliss!


1 Whole orange

250 ml Water

125g Fruit sugar

200g Dark chocolate (my favourite is Lindt)

100g Ground almonds

3 Eggs, separated

1/2 Tsp Baking powder


1) Put the orange in a small bowl with 250ml of water and cover with cling film.  Microwave on full power for 20 minutes.  Leave to cool, still covered

2) Heat the oven to 180 degrees conventional or 160 degrees fan assisted and line a spring-form or loose based tin of 20cm diameter

3) Cut the orange in half and remove the pips, then put in the blender/food processor until a smooth paste

4) Put the orange paste into a large bowl and add the sugar, melted chocolate, ground almonds, egg yolks and baking powder.  Mix thoroughly

5) Beat the egg whites in a clean bowl until they form stiff peaks, gently fold the egg whites into the chocolate mixture and spoon into the cake tin

6) Bake for 40-50 minutes on the middle shelf of the oven

7) When baked through, leave to cool until completely cold

8) To make the icing, melt the chocolate and add the zest of the orange, finally stir in the soured cream to loosen.  Pour over the cooled cake and spread evenly over the cake and put in the fridge

9) Decorate as you wish with chocolate curls, balls, sprinkles or edible glitter

10) Eat a little at a time as this is a fabulously rich cake but as healthy as chocolate cake gets with no fat or flour, you can enjoy this without guilt!
