Salmon pasta salad

salmon pasta saladAs you all know, I am positively obsessed with pasta!  I love it almost as much as cake and could probably eat this for every meal I ever have!  I am mindful though of a need to be healthy and not over do it and to this end I made this yummy salmon pasta salad the other day for a mid week dinner.  It was super easy, quick and delicious, perfect if you want something healthy without spending hours in the kitchen.

 

Ingredients

Half a bag of rocket salad leaves (or your favourite leaves)

1 Fillet of salmon, skinned after cooking

Drizzle of soy sauce

1/4 – 1/3 of a Cucumber, sliced

Half pack of green beans

2 or 3 Spring onions, sliced

80g Penne pasta (or a pasta shape of your choice)

The dressing is made from a tbsp of balsamic and a tbsp of olive oil

Salt and pepper to season

You could also add a few halved cherry tomatoes and/or a few heads of asparagus if you have them to hand

 

Method

 1) Put the pasta onto cook, half way through add the green beans.  Cook the pasta until al dente, drain and cool with cold water whilst in the colander, then set aside

2) Marinade the salmon in  a drizzle of soy sauce for up to 1 hour before cooking, then fry the salmon in a pan on a medium heat, ensuring your sear each side of the fish (until brown), before you use a blunt implement to flake the salmon and remove the (probably charred) skin

3)  Arrange the leaves on a plate

4)  Slice the cucumber, spring onions and tomatoes and arrange on top

5) Scatter the pasta and beans, followed by the salmon on top of the rest

6) Drizzle a little balsamic and olive oil over

7) Serve

Easy peasy, lovely dinner for mid week mayhem !
