Risi e bisi (oven baked bacon & pea risotto)

This is a fantastically lazy supper which is just the thing if you’re short on time but don’t want to scrimp on flavour. It needs to bake for about half an hour but then means you can get on and do something else!



2 Tsp Oil (I used olive oil)
1 White onion, diced
8 Rashers of bacon, diced (not too small)
3 Handfuls of peas (or as many as you like)
240g Risotto rice
500ml Stock (chicken or vegetable, I used vegetable)


1) Preheat the oven to 160 degrees fan assisted or 180 degrees conventional

2) Heat an ovenproof pan (with a lid) and warm the oil

3) Dice the onion and bacon

4) Soften the onion in the pan, then add the bacon

5) Allow the bacon to catch slightly

6) Boil the kettle and make the stock

7) Quickly add the rice and peas, stir in and cook for 1-2 minutes

8) Add the stock and stir briefly

9) Put in the oven and bake for 25-30 minutes

Then there is nothing to do but put your feet up and enjoy! This will serve four with a side salad or three good sized lunch
