Peanut butter fudge

This was a very satisfying, simple and scrummy recipe from Sophie Dahl’s TV show from a few years ago… which was not always well received but this was one of the good recipes, so definitely worth trying.


125g Butter

500g Dark brown sugar

120ml Milk

250g Crunchy peatnut butter

1 Vanilla pod, deseeded or 1-2 tsp vanilla extract

300g Icing sugar, sifted



1) Grease and line a 20 or 23cm tin

2) Melt the butter in a saucepan over a medium heat

3) Stir in the brown sugar and milk

4) Bring to the boil for 2-3 minutes WITHOUT stirring (I always find this bit tricky, as I always want to be involved)

5) Remove from the heat and stir in the peanut butter and vanilla

6) Sift the icing sugar into a large bowl

7) Pour the hot butter and sugar mixture on top of the icing sugar and mix gently until smooth

8) Pour the mixture into the tin

9) Set aside and cool slightly, before putting into the fridge to cool completely

10) Cut fudge into squares and store in an airtight container

11) Enjoy with a nice cuppa, mmmmmm
