Banana muffins for Lady Catherine

IMG_1760As some of you may know, I am now in the throws of training for the London Marathon… yes I a foolish error of judgement perhaps but I am enjoying the training probably because I get to hang out with the lovely Lady Catherine and Faye aka Yoda. So when Lady Catherine requested Banana muffins how could I refuse?  Especially as I bought a bunch of bananas and promptly forgot all about them… IMG_1723


Hence the muffins were born.. this recipe made 9 large muffins, so would go further if you made them a little bit smaller.


75g Melted butter / stork

250g Self raising flour

1 Tsp Baking powder

1/2 Tsp Bicarbonate of soda

1/2 Tsp Ground cinnamon

1/2 Tsp Freshly grated nutmeg

115g Brown sugar (light or dark is fine)

1 Tsp Vanilla extract

2 Large, ripe bananas (or 3 medium sized, as I used)

2 Medium eggs, whisked

125ml Milk (or soya milk, as I used)



1) Pre heat the oven to 190 degrees and put muffins cases into the tin

2) Melt the butter over a hot saucepan of water or in the microwave for 1 minute

3) Mash the bananas

4) Sift together the dry ingredients, add the sugar and mix together

5) Whisk the eggs lightly, add vanilla extract, melted butter and mashed bananas

6) Make a well in the dry ingredients and pour in the wet ones.  Combine gently with a metal spoon

7) Loosen with a little milk until it’s the right consistency for spooning into the muffins cases

8) Spoon into cases and bake for 20-25 minutes or until spring back

These can be served as a dessert with crème fraiche, ice cream or cream… or could be scoffed as a breakfast on the hop.  My boss has never been excited about anything I’ve baked before but these were a big hit.
