Dark chocolate chip muffins

choc chip muffins 2I made two different kinds of muffins for my lovely friend Lorraine’s charity bake sale and this was the second batch I made… I found this recipe in my favourite place – the BBC Good Food website of course and they went down a storm.

  • 300g self raising flour
  • 1 teaspoon baking powder
  • 50g cold unsalted butter cubed
  • 80g light brown sugar
  • 150g milk or plain chocolate chips
  • 2 eggs , lightly beaten
  • 225ml milk
  • 1 teaspoon vanilla extract

  1. Pre heat the oven at 200 degrees
  2. Mix the flour and baking powder with a metal spoon
  3. Rub in the butter with your finger tips until it looks like breadcrumbs
  4. Stir in the sugar and chocolate chips
  5. Create a well in the dry ingredients
  6. In a jug mix the wet ingredients and pour into the well
  7. Mix all together
  8. Divide between 12 muffins cases
  9. Bake for 15-20 minutes
  10. Enjoy with a lovely cuppa
