Lemon curd & white chocolate muffins

white choc muffinsMy fabbo friend Lorraine, asked me to do a few muffins for her charity bake sale to raise money for a wonderful local charity; St Christopher’s Hospice.  So having a given in a few moments thought, I decided to give these a try and they went very well and super easy to make… the original recipe is on the BBC Good Food website named Lemon Curd muffins but you need to double the ingredients to make decent sized muffins.


  • 400g self-raising flour
  • 200g golden caster sugar
  • 2 large eggs
  • 150ml sunflower oil
  • 300ml milk
  • 1 tsp vanilla extract
  • 1 lemon, zested and 1/2 lemon juice
  • 60ml/12 tsp lemon curd
  • 100g white chocolate, roughly chopped


  1. Pre heat the oven to 190 degrees
  2. Mix the dry ingredients (except the white chocolate) and make a well
  3. Mix the wet ingredients and pour into the dry ones
  4. Mix thoroughly
  5. Divide half the mixture between 12 muffins cases
  6. Add a spoonful of curd to each muffin
  7. Divide the rest of the mixture between the cases on top of the curd
  8. Add the chocolate on top of each muffin
  9. Bake for 12-15 minutes or until golden and springy
  10. Enjoy
